That’s what I call it!

You can make new dishes with leftover food in several ways. Like making an omelet out of the veggies, soup/pasta with meat, fried rice with boiled rice, etc. Otherwise, you can use the leftovers to top a pizza, fill a sandwich, quesadilla or burrito, or make a simple salad with. But, what about the barely touched chutneys you don’t want to go to waste? Are you aware that you can make a whole new dish with it?

NONVEG - YOGHURT & CORIANDER CHUTNEY CHICKEN
Green Chutney

Here is an idea for you! If you have green chutney lying in your fridge, use it to make this yummy yogurt & coriander chutney chicken.

RECIPE

INGREDIENTS:

Oil/Ghee
1 tsp cumin seeds
8 curry leaves
1 large onion finely chopped, pureed (boil, cool and grind) is better
3 tbsp cooking cream, or according to thickness required – You can buy it here

For the marinade:
800 grams chicken
1 cup yoghurt
2 tsp ginger garlic paste
1 tsp cardamom powder
1 tsp pepper powder
2 tsp coriander powder
1 tsp garam masala – You can buy it here
1 tbsp lemon juice
1 tsp green chilli paste – you can skip this if the chutney has enough chili
2 to 3 tbsp leftover coriander chutney
½ tsp chaat masala – You can buy it here
Salt per taste (Tip – Remember that chaat masala and coriander chutney would have enough salt so taste them and then measure accordingly)

A cup of yogurt

METHOD:

  • Marinate the chicken, and keep aside, for at least an hour.
  • In a utensil, heat some oil. Add cumin seeds and curry leaves to splutter.
  • Add onion (raw or pureed) and fry until the color changes.
  • Add the marinated chicken and fry on high flame for 5 minutes.
  • Reduce the flame and cover the utensil so the chicken cooks for another 10 minutes.
  • Add the cooking cream and cover it. Let it cook for another 3 to 4 minutes.
  • Serve with your favorite roti or naan. You can also have it without any carbohydrates on the side. 😉

Pin it like it’s hot!

We believe in 0% wastage. Here are some more ideas to make use of leftovers:

  • The leftover wine at the end of the bottle – Freeze into ice cubes and use in stews and sauces.
  • Loads of garlic that may spoil while you are on vacation – Put the peeled garlic cloves in a glass jar and cover with olive oil. Seal and store it in the fridge. This combination can be used as pickles or separately and doesn’t spoil for many months.
  • A bit of jam left – Mix with half the amount of vinegar and a dash of Worcestershire sauce (You can buy it here). This can be used as a quick spread for sandwiches or poured over chicken pieces before baking.
  • Scrape the little bit of mayonnaise that stick on the sides of the container and mix into hot mashed potato or scrambled eggs, before serving, for a delicious flavor.
  • Save peels and tops of carrots, onions (not the dry skin) and other veg and keep in a sealed bag in the fridge.  Use this with leftover bones as the basis for some delicious home-made stock.
  • Leftover ground coffee can be rubbed on any wooden furniture to hide the scraped edges or marks.

    I think I can easily tweak this recipe and use paneer instead of chicken. The marination is quite good and too tempting to pass it up. Must smell heavenly.
